Pizza Salad

 

Treat yourself to the easiest weekday lunch!

Beans get simmered in garlic, onions get a quick pickling, tomatoes are roasted with hot chili honey, croutons are made in oven, and then it all gets tossed together to create a salad for your senses.

We would never say to replace pizza with salad. Never ever. Pizza is a meal made in heaven. But there are times when we may be looking for something lighter and low in carbs, but with all the umami flavors.

Inspired by #Jennys_Kitchen, we went ahead and made a pizza salad for lunch.

 
 

Toss together the following:

  • Cannellini beans simmered with garlic

  • Roasted cherry tomatoes

    • Toss with 2 tbsp olive oil

    • 1 TBSP chili honey

    • Salt & pepper to taste

    • Roast until blistered and set aside to cool

  • Quick pickled red onions

    • 1/4 red onion

    • pinch of oregano

    • 2 TBSP red wine vinegar

    • Marinate while preparing rest of salad

  • Salad base

    • Kale (chopped and massaged with olive oil and salt first)

    • BUF Ciliegine

    • Kalamata olives

    • Parsley

    • Croutons made with leftover sourdough bread, olive oil, salt, and pepper
