It all starts with our buffalos.
Our goal is to keep our buffalo in a natural, low stress environment and try to make the milking process as enjoyable as possible for them! How? They receive a shower to clean off and relax before heading to the milking station. Once at the parlor, our buffalo are only milked when their young are right next to them; for this closeness stimulates the mom.
These are some of the initiatives that psycologically stimulate the mother who then, releases her milk with the healthiest nutrients and finest flavor.
By keeping this process, the buffalo produce a greater quantity & better quality of milk while ensuring they live longer, happier lives.
Then, it’s on to our factory.
Our raw milk is now transported carefully to our factory.
We built our factory in 2009, specifically designed to process buffalo milk. We are proud to say that we are the only USDA Organic Certified buffalo mozarella on the continent. We are proud to be leaders in organic production of water buffalo milk.
It is here that the milk is transformed into our delicious mozzarellas, ricottas, burratas & Andean yogurts.
And off it goes!
