BUF Banh Mi Sandwich


Our refreshing and fresh take on the traditional Vietnamese Banh Mi, with quick pickled veggies and BUF Mozzarella.


 
 

What you’ll need:

1 baguette
2 jalapeños, thinly sliced
1 cucumber, thinly sliced
1 handful quick-pickled carrot, daikon or radish &
onion
1 package BUF mozzarella (ciliegine balls or ovoline)
mayonnaise
sriracha
fresh cilantro and/or fresh mint

1. Split the baguette in half lengthwise. Make sure the crust is not too crusty and remove some of the dough inside. Lightly toast under a broiler to warm it up.

2. Layer ingredients, starting with mayonnaise, followed by BUF mozzarella, cucumber, jalapeños, and quick-pickled veggies.

3. Finish with fresh herbs, and then drizzle with srirarcha to taste.

 
 
 

QUICK-PICKLED VEGGIES

rice vinegar
water
sugar
carrot, thinly sliced
daikon or radish, thinly sliced
onion, thinly sliced

1. Place rice vinegar, water, and sugar into a saucepan over medium heat, bring to a boil, and stir until the sugar has dissolved, about 1 minute. Allow the mixture to cool.

2. Pour the cooled vinegar mixture over the carrot, radish, and onion in a bowl, and allow to stand for at least 30 minutes. Drain off the excess vinegar mixture after the vegetables have marinated.
